GDPR plugins and self-developed solution

Hi everyone, I want to verify if I'm missing anything. I am making a small restaurant website and I want to make it comply with German GDPR. I notice there are solutions like Cookiebot. I was wondering if we can make all of the compliance stuffs by ourselves, or if these 3rd party solutions have something superior that we cannot execute on our own?
